Very useful video on how to make a poster, although this is in powerpoint and you suggested publisher I think the font style and size apply to both. to summerise for an A0 poster:
Title - non-serif font style 85 pt
Main body - serif style 24pt
Authors - 56pt
Heading 36pt
Captains 18pt
Use line spacing (1.5) and better to not justify the paragraphs
